Quick Bread: Chocolate Zucchini Bread

Ingredients

• 3/4 cup butter
• 1 1/2 cup sugar
• 2 eggs
• 2 cups flour
• 1 t baking soda
• 1/2 t salt
• 4 T cocoa
• 1 1/2 cups peeled and grated zucchini
• 1 t vanilla
• 1/2 cup buttermmilk
• 1/2 cup chocolate chips

Preparation

Step 1

Cream butter and sugar. Add eggs, vanilla & zucchini. In separate bowl, whisk dry ingredients. Add dry ingredients to creamed butter alternating with buttermilk.

Bake 325° for 1 hour.
