Spinach Filled Phyllo

Ingredients
- 2 large bunch of spinach (washed and drained)
- 1/2 cup parsley, finely chopped
- 3 green onions, finely chopped
- 1 1/2 teas. salt
- 1/4 teas. pepper
- 1/2 cup lemon juice
- 1/4 cup vegetable oil
- 1/2 cup feta cheese
- 1 lb. phyllo dough
- soft butter

Step 1
If phyllo dough is frozen, thaw at room temperature for 4-5 hours. Unroll and over with damp cloth. Handle phyllo carefully while working with it. Always keep remaining dough covered with a damp cloth.
Set over at 350 degrees. Chop spinach into bite pieces and place in large bowl. Add chopped parsley, onions, salt, pepper, lemon juice and veg.oil. Chop up feta cheese and add to spinach mix. Toss well. Use 4 layers of phyllo at a time. Cut into 5x5 squares. Place 2 heaping tab. of spinach filling across the top edge of the dough closet to you. Fold the tow outside edges 1 inch towards the center. Roll (jelly roll) and place on a greased baking sheet with the edge down. Brush with butter. Bake 25-30 minutes.
