Ingredients
- Topping:
- 1 cup oil
- 1 1/2 cup sugar
- 1 1/2 tsp. vanilla extract
- 3 large eggs
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 1/2 cup flour
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1 1/4 cup milk
- (2) 3.5 oz. box instant pudding or 1 large one
- 1/3 cup sugar
- 1 tsp cinnamon

Step 1
Mix 1/3 cup sugar and 1 tsp. cinnamon together in small bowl. Set aside.
Preheat oven to 325°.
In greased loaf pan, sprinkle mix on the sides and bottoms of the pan. Save some to sprinkle on top of the loaf.
Combine first 4 ingredients in a large bowl. In separate bowl combine dry ingredients. Add to wet ingredients and stir well.
Pour batter into prepared pan, sprinkle top of loaf with the sugar/cinnamon mix.
Bake for at least one hour or until tested done. Cool in pan for 10 minutes. Freezes well. Tightly wrap cooled loaves in plastic wrap, then in foil before freezing.
