Baked Sweet Potato Falafel

Ingredients
- 2 sweet potatoes or yams, cooked and peeled
- 1 can chickpeas, drained and rinsed
- 2 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp turmeric
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cinnamon
- 1 tsp coriander
- 2 tsp parsley
- 2 Tbsp ground flax

Preparation
Step 1
Preheat oven to 400 °F.
Mash sweet potatoes with chickpeas. Add in seasonings and flax and mash again until the mixture sticks together.
Spray baking sheet or line with foil. Roll mixture into 1” balls and place on baking sheet. Ignore your orange hands. Brush or spray with olive/canola oil.
Bake 25-30 minutes. Let cool on baking sheet 5 minutes.
Serve!
