Ingredients

  • 1 cup vegetable shortening (use half butter if desired)
  • 1 cup firm-packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup dark pure maple syrup
  • 2 eggs
  • 4 cups flour
  • 2 1/2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • Granulated sugar

Step 1

Preheat oven to 350 degrees. Grease a baking sheet. Cream shortening and sugars in a large bowl until fluffy; beat in maple syrup and eggs one at a time.

Combine flour, soda, spices and salt in a medium bowl. Add flour mixture to shortening mixture a little at a time, mixing until well blended. Dough will be sticky.

Sprinkle granulated sugar onto a sheet of waxed paper.With buttered hands, roll dough into 1&1/2-inch balls and dip tops into the sugar. Place 2 inches apart on baking sheet.

Bake 12-13 minutes or until light golden brown and center is set; do NOT overbake. Let cool on baking sheet for 1 minute or so, then transfer to wire rack to cool completely. Makes about 4 dozen cookies.
