Ingredients
- 1 cup instant whole grain rice, uncooked
- Cooking spray
- 2 Tbsp corn starch
- 2 Tbsp water
- 1/4 cup lite soy sauce
- 2 skinless, boneless chicken breasts, cut into thin strips
- 1 cup sugar snap peas
- 1/2 cup red bell pepper, cut into strips
- 1/2 cup carrots, cut into strips

Step 1
Prepare rice according to pkg directions.
Combine corn starch and water until smooth. Add soy sauce and set aside. Apply cooking spray to nonstick skillet. Add chicken breast and cook for 3 to 4 min or until almost completely cooked. Add vegetables and soy sauce mixture. Serve stir fry over rice.
