Garlic Seafood Quesadillas

Ingredients
- 1 pkg imitation crab sticks or pieces, or imitation lobster pieces
- 8 oz pkg cheese – brie, part-skim mozzarella, fresh mozzarella, or Monterey jack
- 4 whole wheat tortillas
- 1-2 heads roasted garlic
- 1-2 T olive oil
- Salsa of your choice
- Lite sour cream
- Optional: finely minced onion, thinly sliced mushrooms, chopped cilantro, seeded diced tomato, finely minced jalapeno

Step 1
If not already shredded, thinly slice the cheese. Coarse chop the seafood into bite-size pieces. Cut or mash several cloves of garlic.
In a heavy skillet over medium heat, add a splash of olive oil and spread to cover the skillet. When hot, put one tortilla in the skillet and cover with one half of the seafood, cheese, garlic, and any optional ingredients. Top with another tortilla and heat until the bottom tortilla just starts to brown. Carefully turn over the quesadilla and continue to heat until the tortilla starts to brown. Remove to a plate and keep warm while the second quesadilla is prepared.
Cut into wedges and serve with your favorite condiments: salsa, sour cream, guacamole, etc.
Note: surprisingly, brie cheese has less fat per ounce than cheddar, Monterey jack, or muenster cheeses.
