Pecan Chews with Bourbon

Ingredients
- 2 cups flour
- 1 tsp salt
- 1/2 tsp allspice
- 1 cup molasses
- 1 stick (1/2 cup) butter, softened
- 1/4 cup bourbon
- 1 cup light brown sugar
- 4 cups chopped toasted pecans

Step 1
Whisk flour, salt and allspice in a bowl. Cook molasses and butter in a small saucepan over medium heat, until butter is melted and mixture is smooth. Let cool slightly, then stir n bourbon. Transfer to a bowl, whisk in brown sugar until smooth. Stir in flour mix and 1 cup pecans. Chill dough 1 hour or up to one day.
Preheat oven to 400. Shape dough into balls (1 tbsp each). Roll balls in rest of pecans, place on parchment lined baking sheets, 2 inches apart. Bake, rotating sheets, until flat and brown, 9-11 minutes.
Let cookies cool on sheets 3 minutes, then transfer to wire racks to cool completely.
