Ingredients
- 4 (3 oz.) pkg. cream cheese
- 1/2 c. sugar
- 2 eggs
- 1/2 tsp. vanilla, lemon or almond flavoring
- 1/2 tsp. jam (for each cake)

Step 1
Blend cream cheese with sugar until smooth, adding eggs one at a time. Then add vanilla. Fill Teflon-coated mini muffin tins 2/3-full and bake at 300° for 20 minutes. Cool 10 minutes. Mix topping ingredients. Put 1 tablespoon topping mix on each cake and top with 1/4 teaspoon jam. Bake for 10 more minutes. Transfer to picnic in muffin tin covered with plastic wrap.
Note: Don't use paper muffin liners in this recipe.
