Ingredients

  • 2 pounds (6 medium or 3 large) potatoes, peeled, thinly sliced
  • 3 Tbsps butter
  • 1/4 cup chopped onion
  • 3 Tbsps flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup water
  • 1 can evaporated milk
  • 6 ounces Cheddar cheese

Step 1

Grease 11 x 7 inch baking dish.

Place potatoes in a large saucepan. Cover with water; bring to a boil. Cook at medium-high heat 3-4 minutes; drain. Layer potatoes, sprinkle cheese, salt and pepper between layers. eave some cheese for top layer.

Melt butter in same saucepan until sizzling; add onion. Cook over medium heat, stirring occasionally, until onion is softened (1-2 minutes). Stir in flour, salt and pepper. Gradually stir i evaporated milk and water. Cook, stirring constantly, until mixture comes to a boil. Remove from heat. Pour milk mixture over potatoes.

Bake for 30 minutes or until potatoes are tender.
