"An Oregon woman took home the $6,500 grand prize in the 'Bake it Better with Kids' recipe contest. Renata Stanko, of Lebanon, OR, added oats, honey and peanut butter to a simple pancake recipe to create Flap Jack's Peanut Stacks.
The contest, sponsored by Quaker Oats and the National Honey Board, encouraged parents to spend more quality time with their children through cooking together.
'Everyone likes pancakes, especially kids, and Flap Jack's Peanut Stacks make a great start to a weekend morning when there's enough time to cook together, ' Stanko said. 'Kids can help with measuring and mixing, then set the table while an adult does the cooking.'"

Ingredients
- 1 cup peanut butter
- 3/4 cup honey
- 1 cup Quaker oats (quick- or old-fashioned uncooked)
- 1 1/4 cups lowfat buttermilk
- 1/2 cup all purpose flour
- 1 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg, lightly beaten
- 2 tbsp vegetable oil
- 3 medium-size ripe bananas, sliced

Preparation
Step 1
In small bowl, combine peanut butter and honey; mix well. Set aside.
In medium bowl, combine oats and buttermilk; mix well. Let stand 10 minutes. In large bowl, combine flour, sugar, baking powder, baking soda and salt. Add egg and oil to oats mixture; blend well. Add to dry ingredients all at once, stir with fork just until dry ingredients are moistened Do not overmix.
Heat griddle over medium-high heat (or preheat electric griddle to 350 F). Lightly grease griddle. For each pancake, drop scant 1/4 cup butter onto hot griddle; spread into 4-inch circle. Turn pancakes when edges are covered with bubbles and begin to look coated. (These pancakes are thicker than traditional pancakes and take longer to cook).
To serve, place one pancake on a plate and spread with 1 tbsp of the peanut butter/honey mixture. Top with 4 to 6 banana slices and another pancake. Repeat with another layer of peanut butter/honey and banana. Do the same for four more plates, making stacks of two pancakes. Drizzle with honey, if desired.
