Ingredients
- 2 TBSP olive oil
- 1 TBSP each smoked paprika and chopped
- fresh rosemary
- 1 tsp each chili owder, garlic powder and onion powder
- 4 lbs boneless pork loin roast
- 3 onions, peeled and cut into wedges
- 8 oz baby carrots

Step 1
1. Heat oven to 450 degrees. In bowl, blend first
6 ingredients; season with salt and ground black pepper, if desired. Rub mixture over pork.
2. Place pork in roasting pan; roast 10 minutes.
Reduce oven temperature to 325 degrees. Add onions and carrots.
3. Cook 1 hour 30 minutes or until inserted
thermometer reads 155 degrees, basting occasionally.
Let sit 10 minutes, then serve.
