Ingredients
- 2 whole skiless and boneless chicken breasts
- 1/3 cup margarine, softened
- 1/2 cup finely chopped nuts (almond or macadamian)
- toasted.
- 2 tbs. parsley
- 1 tbs. sliced green onion tops
- 1/2 cup shredded coconut
- 1/2 cup day old bread crumbs
- 1 beaten egg

Preparation
Step 1
Place chicken, inner side up, between 2 pieces of waxed paper and pound out from center 1/8" thick. Combine margarine, parsley, nuts and onion. Spoon mixture into the center of the chicken and wrap up. Dip chicken in egg and roll into bread crumbs and coconut mixture together. Refrigerate covered at least 1 hour. Bake at 375 degrees for 40 minutes. Do not turn.
To microwave:
Place chicken seam down. Microwave uncovered on medium for 10 minutes. Turn chicken over. Microwave, uncovered for 10 to 12 minutes, rotating half turn after 6 minutes.
