Satays with Peanut Saauce

Fun appetizer dish with a Thai flare. You can use beef or chicken.

Remember to let your bamboo skewers soak in water about an hour before putting over fire.

Ingredients

  • MEAT/MARINADE:
  • 1/2 cup canned unsweetened coconut milk
  • 1/3 cup minced shallots
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 lb of boneless beef sirloin or chicken breast, cut across the grain into thin strips
  • PEANUT DIPPING SAUCE:
  • 1 cup canned unsweetened coconut milk
  • 1/2 cup peanut butter
  • 4 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp Thai Massaman curry paste (or similar)
  • 1/2 tsp curry powder
  • ***
  • 1/2 cup hot water
  • 2 tsp lime juice

Step 1

For marinade, process all ingredients except meat in a blender or food processor until smooth.

Place meat and now smooth marinade in a shallow dish. Toss and coat the meat thoroughly. Cover and let stand for 1 hour at room temperature, or refrigerate for 24 hours.

For peanut sauce, add all ingredients (except water and lime juice) into a medium saucepan. Then whisk in hot water throughly and simmer over low heat, stirring occasionally until well blended, about 15-20 minutes. Stir in lime juice. Keep warm while you cook the meat.

Prepare a hot grill or preheat broiler. Thread each meat strip into a 6-in bamboo skewer. Lightly brush each side of skewer with vegetable oil and grill/broil, turning once, 2-3 minutes.

Serve immediately.
