Ingredients

  • 4 4 oz. boneless, skinless chicken breast
  • salt and pepper
  • 1 teas. sesame oil
  • 1/4 cup minced scallions, white part only
  • 3 cloves garlic, minced
  • 1 tbs. fresh ginger, minced
  • 3/4 cup reduced-sodium chicken broth
  • 1/3 cup rice wine vinegar
  • 2 tbs. hoisin sauce
  • 2 teas. sugar
  • 1 tbs. low sodium soy sauce
  • 1/2 cup sliced scallions, green part only

Step 1

Season chicken breast with salt and pepper. Spray a nonstick skillet with cooking spray and heat over high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil to keep warm.

Reduce the heat to medium and add the sesame oil. Add the minced scallion whites, garlic and ginger. cook, stirring 1 minute.

Add the chicken broth, vinegar, hoisin sauce, sugar and soy sauce. Bring to a simmer. Cook until slightly thickened about 3 minutes.

Return the chicken and juices to the skillet and reduce the heat to low. simmer until the chicken is cooked through, about 4 minutes.

Transfer the chicken to a p latter and spoon the sauce over the chicken. Garnish with green scallions.
