Ingredients
- 1 lb boneless chicken breast
- 64 oz chicken broth
- 8 oz green chiles
- 1 bunch scallions finely chopped
- 1/4 c red onion finely chopped
- 1 tsp fresh minced garlic
- 1 tsp oregano
- 1/2 c diced red pepper
- 3 tbsp minced fresh cilantro
- 1 stick butter
- 2/3 c flour
- heavy cream (optional)

Preparation
Step 1
Cook 1 lb chicken, cool and dice into about 1/2 in pieces
Bring 64 oz chicken broth to boil
Add chiles, scallions, red onion, garlic, and oregano
Cook until scallions are tender-about 5-7 min
Meanwhile, make a thick roux of 1 stick butter and 2/3 c flour. Cook about 5 min, whisking constantly
Add some of stock mixture, stirring, until the roux is thick and creamy. Pour creamy roux back into remainder of stock
Stir in chicken, bell pepper, and cilantro
Adjust for taste. Add heavy cream to thin to desired consistency
