When my brother first started making this recipe, it was an evening-long event with guests included in making everything, even the homemade pasta. If you can and have the time, try this at your next dinner party and be sure to have several bottles of wine. It will be an entertaining evening for all!

Ingredients

  • 1 1/2 # veal scallopine
  • 1/2 C flour
  • 7 Tbsp butter
  • Salt and pepper
  • Juice of 1 lemon
  • 1/3 C dry marsala wine
  • 1/2 C chicken stock

Preparation

Step 1

Pound veal and press in as much flour as possible. Melt butter over medium heat and add veal. Turn after 2 or 3 minutes. When done remove to a warm platter. Deglaze pan with marasala wine and stock. Add lemon juice. Return meat to gravy. Serve immediately.

Serve with a side of buttered noodles and asparagus.
