  • 2 pounds ground turkey
  • 6 eggs
  • Italian bread crumbs
  • Fresh chopped parsley
  • 1/4 t baking powder
  • 1 c grated cheese
  • Flour
  • Frozen spinach
  • 6 c chicken stock
  • grated cheese as garnish

Preparation

Step 1

1) Make meatballs by combining turkey, 2 eggs, bread crumbs, and parsley. Shape into tiny meatballs and brown in the oven on a baking sheet.

2) Make croutons by combining 4 eggs, baking powder, and cheese. Add flour until batter is thick like pancake batter - still a little runny; not doughy. Cover the bottom of an oiled pan with the batter about 1/2 inch thick. Cook until it bubbles and flip and cook other side. Remove from heat and let cool. Then cut into cubes.

3) Heat 6 cups chicken stock in a large pot. Add spinach.
4) Ladle the soup in a bowl, add meatballs, sprinkle with cheese and croutons.
