Ingredients

  • This is sooo simple!!!
  • Whole wheat pasta
  • 1-2 Tblspn olive oil
  • 1 tsp lemon zest
  • Salt
  • Pepper
  • ¼ cup pasta cooking water
  • Fresh basil, chiffonade
  • ¼ cup shredded Parmesan cheese

Preparation

Step 1

According to the package instructions, prepare the desired amount of pasta – any shape you wish. When done, reserve about ½ cup of the pasta cooking water. Drain the pasta and put in a large serving dish. Dress the pasta with the olive oil, lemon zest, salt, and pepper. Add the pasta water, a little at a time, to moisten and make slightly creamy. Normally 1 to 2 Tblspn will be enough. Stir in the basil, top with the Parmesan cheese and serve.

Additions:
Coarsely chopped kalamata olives, fresh flat leaf parsley instead of basil, rubbed sage (especially if serving with saltimbocca), coarsely chopped sundried tomatoes, chopped scallions, rough chopped toasted pine nuts, sautéed mushrooms, rough chopped roasted garlic, peas, chopped prosciutto.
