Ingredients
- 1 tbsp margarine
- 1 cup fresh mushrooms, sliced
- 1 cup zucchini, sliced
- 1/3 cup green onions, sliced
- 1/3 cup green pepper, chopped
- 2 tbsp pimiento, chopped
- 1 cup Cheddar cheese, shredded
- Pastry for 10-inch pie
- 4 large eggs, beaten
- 1 1/3 cups half-and-half
- 1 tsp "chicken style" seasoning
- 1/4 tsp salt

Preparation
Step 1
Melt margarine in large frying pan over medium heat. Add mushrooms, zucchini, onions, pepper and pimientos. Saute for 5 minutes. Remove from heat, let vegetable mixture cool slightly, stir in cheese. Place pie crust in 10-inch quiche pan. Spoon vegetable mixture into crust. Then, in large bowl combine eggs, half-and-half, "chicken style" seasoning and salt. Mix well and pour over vegetables. Bake at 350 F for 45 minutes. Garnish with additional cheese and green onions, if desired.
