Ingredients
- 2 baguette breads, sliced
- 1 green bell pepper, chopped
- 2 tomatoes, chopped
- 3 garlic cloves, minced
- 1/4 cup (50 mL) chopped pitted black olives
- 1 jalapeno pepper, finely chopped
- 4 anchovies fillets, finely chopped
- 2 tbsp (30 mL) chopped fresh basil
- 1/2 tsp (2 mL) dried rosemary
- 1/4 cup (50 mL) olive oil
- Juice of 1 lemon
- Pepper, to taste
- 40 small slices of Canadian Mozzarella cheese

Preparation
Step 1
Preheat oven to 500 °F (260 °C).
Place bread slices on baking sheet and toast in oven for about 45 seconds on each side. Remove from oven and set aside. Reduce oven heat to 400 °F (200 °C).
In bowl, combine all ingredients, except cheese. Mix well and season to taste with pepper. Drain mixture, scoop on toasts and top each one with a slice of Canadian Mozzarella cheese.
Bake for 7 to 9 minutes. Remove from oven and let stand for 5 minutes. Serve with a small seasonal saladTime
