Ingredients

  • Crust
  • 1 package of Oreos (regular or candy cane), crumbled OR 3 cups chocolate graham crumbs mixed with 2 egg whites
  • Cheesecake
  • 16 oz fat free cream cheese
  • ¾ c. sugar
  • 1 c fat free sour cream
  • 3 large eggs OR 3/4 cup egg beaters
  • 2 t. vanilla extract
  • 2 t. almond extract
  • 2 t. peppermint extract
  • 2 t. lime juice
  • pinch of salt
  • ½ c. crushed candy canes

Preparation

Step 1

Press crust ingredients into greased 9x13 pan and back at 350ºF for 15 minutes. Remove and let cool.

Beat the cream cheese with a mixer until smooth. Add the sugar and beat until creamy. Beat in eggs and then the sour cream. Add extracts, lime juice, and salt and mix. Stir in ¼ cup crushed candy canes (save the rest for later). Pour into the crust.

Bake at 350ºF for 30 minutes. Turn off the oven and open the door briefly to let out some heat. Leave the cheesecake in the oven for 40 more minutes. Let cool completely then place in refrigerator for several hours or overnight. Cut into squares and sprinkle with remaining candy canes right before serving.
