  • 6 tablespoons butter
  • 12 eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 teaspoon ground white pepper

Preparation

Step 1

Preheat oven to 350 degrees Fahrenheit.

Butter the inside of 6- to 8-ounce soufflé, pudding cups or ramekins.

Break the eggs, one at a time, into a small, shallow fruit dish and slide them, one at a time, into the buttered dishes. Use two eggs per dish.

Drizzle the eggs evenly with cream and sprinkle each with cheddar cheese.

Fill a roasting pan with enough water to rise ½ inch up the sides, put the soufflé dishes into this water bath and place the roasting pan into a hot oven.

Bake for six to eight minutes or until the whites and yolks have begun to set. Serve immediately.
