Ingredients
- 3 C heavy cream
- 1 C milk
- 3/4 C sugar
- 4 egg yolks
- 1/4 C coffee granules

Step 1
Heat cream, milk, and sugar in heavy pan, stirring until sugar is dissolved and mixture is hot. Whisk yolks briefly and slowly pour about 1 C hot liquid onto yolks, whisking constantly. Combine and cook over medium heat, stirring until mixture is thick and slightly coats back of spoon, about 8 minutes. Do not let boil or it will curdle. Add coffee granules and stir over low heat until coffee is dissolved. Cool. Freeze 20-25 minutes in machine. Makes 1 quart.
