Ingredients
- 3/4 C sifted flour
- 1 3/4 tsp baking powder
- 1/2 tsp salt
- 2 1/2 Tbsp sugar
- 1/2 C yellow cornmeal
- 1 egg, lightly beaten
- 1/2 C + 2 Tbsp milk
- 1 1/2 Tbsp butter, melted

Step 1
Preheat oven 400 °F. Grease 8 muffin tins. To flour, add powder, salt, sugar. Sift in mixing bowl. Stir in cornmeal and mix. Combine egg, milk and shortening in bowl. Add to dry ingredients, stirring just enough to blend. Bake 18-20 minutes
