Ingredients
- 1 C. butter or margarine
- 2 C. powdered sugar
- 4 sq. melted baking chocolate - be sure to cool
- 4 eggs
- 2 t. vanilla
- 1 t. peppermint extract
- 2 C. chopped pecans
- 12 marachino cherries - cut in half

Preparation
Step 1
Beat butter til fluffy - add sugar
Beat for 15 minutes (this is the secret)
Add melted chocolate after cooling chocolate
Beat 5 more minutes
Add eggs, one at a time, beat well after each addition
Add vanilla & peppermint extracts.
Cover bottom of cupcake cups with 1/2 of nuts (about 24)
Spoon in chocolate mixture & top with remaining nuts
Put 1/2 marachino cherry on top
(Can store in freezer in covered container - can be kept frozen for several weeks).
If you make 20 - each one has 7 WW power points
If you make 24 - each one has 6 WW power points
