BFL - Baked Chicken Parmesan
Spinach fettuccine with breaded chicken breast, topped with pasta sauce and Parmesan cheese
- 2 egg whites
- 1/3 cup Italian seasoned breadcrumbs
- 4 tbs. Parmessan cheese, divided
- 1/2 lb. chicken breast
- 4 oz. spinach pasta
- 1 cup low-fat pasta sauce
- 2 cups baby spinach
Cooking time 40mins
Preheat oven to 400.
Dip chicken in whipped egg whites and dredge in breadcrumbs and 2 Tbs. parmesan cheese. Place on coated baking sheet and bak for 12 minutes each side or until no longer pink and coating is brown.
While chicken is cooking prepare pasta. Warm sauce and serve all over spinach leaves.
