Ingredients

  • Muffins:
  • 2 1/4 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 2 eggs, lightly beaten
  • 1 cup dairy eggnog
  • 1/2 cup butter, melted and cooled
  • 1 1/2 tsp vanilla
  • 1/2 tsp rum extract (optional)
  • Nutmeg Streusel Topping:
  • 1/3 cup all-purpose flour
  • 1/3 cup sugar
  • 1/2 tsp ground nutmeg
  • 2 Tbsp butter

Step 1

*For the Muffins:*
Grease 12-15 muffin cups or line with paper baking cups; Set aside. In a medium bowl, combine the flour, sugar, baking powder, and nutmeg. Make a well in the center of the flour mixture; Set the flour mixture aside. In a small bowl, combine the eggs, eggnog, melted butter that has been cooled, vanilla, and rum extract. Add the egg mixture all at once to the flour mixture. Stir the batter just until it is moistened. **The batter should be a little bit lumpy.* Spoon the batter into the prepared muffin cups, filling each two-thirds of the way full. Sprinkle the Nutmeg Streusel Topping over the batter in the cups. Bake at 375 degrees Fahrenheit for 20-25 minutes or until golden and a wooden toothpick inserted in the centers comes out clean. Cool the muffins in the muffin cups on a wire rack for 5 minutes. Serve the muffins warm.

*For the Nutmeg-Streusel Topping:*
In a small bowl, mix together the flour, sugar, and nutmeg. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs.
