Ingredients

  • 2 c AP flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 c butter
  • 4 oz bittersweet or unsweetened chocolate
  • 1 tbs espresso powder
  • 4 oz semisweet chocolate
  • 1/4 c natural cocoa powder
  • 1/4 c dark (dutch process) cocoa powder
  • 4 large eggs
  • 1 c sugar
  • 1 1/2 c dark brown sugar
  • 1 1/2 tsp. real vanilla extract
  • 1/3 c extra dark chocolate chips
  • 1/3 c semi-sweet chocolate chips
  • 1/3 c milk chocolate chips
  • 1 1/2 c powdered sugar
  • 1 tbs regular cocoa powder
  • 2 tbs dark cocoa powder
  • 3-6 tbs hot water
  • flaky sea salt

Step 1

Set a rack at the middle level of the oven and preheat to 350. Grease a half sheet pan. In a bowl whisk or sift together flour, salt and baking powder, set aside. Combine butter and chocolate in a heatproof bowl set over a pan of water that is just barely simmering. Stir until completely melted. Mix in espresso and cocoa powders. Beat eggs together in a large bowl. Whisk in sugars and vanilla. Stir in melted chocolate mixture, then very gently fold in flour just until combined, being careful not to over mix. Gently stir in chocolate chips. Spread evenly on sheet pan and bake for about 30 minutes until toothpick comes out with no wet batter, being careful not to over bake. Cool in pan for about 10 minutes then mix together the powdered sugar, cocoa powders and hot water to make a glaze of drizzling consistency. Glaze the brownies and finish with a sprinkling flaky sea salt.
