Dutch Oven Chicken
- 1 whole chicken
- 1 lemon
- fresh rosemary
- 4 cloves garlic, minced
- 6 new potatoes, halved
- olive oil
- salt & pepper
Wash and dry chicken. Squeeze 1/2 lemon into cavity and season with salt pepper and 2 cloves garlic.
Rub outside with olive oil. Squeeze remaining half lemon over skin. Season with salt, pepper and 2 cloves garlic.
Put lemons and rosemary inside cavity and place chicken in dutch oven. Cover and bake at 350 for 1 hour.
Remove from oven and place potatoes around chicken. Drizzle with a little more olive oil and season with salt, pepper and rosemary.
Return to oven and cook for 45 minutes to an hour or until chicken is cooked thoroughly.
