Ingredients

  • 1 whole chicken

  • 1 lemon

  • fresh rosemary

  • 4 cloves garlic, minced

  • 6 new potatoes, halved

  • olive oil

  • salt & pepper

Directions

Wash and dry chicken. Squeeze 1/2 lemon into cavity and season with salt pepper and 2 cloves garlic. Rub outside with olive oil. Squeeze remaining half lemon over skin. Season with salt, pepper and 2 cloves garlic. Put lemons and rosemary inside cavity and place chicken in dutch oven. Cover and bake at 350 for 1 hour. Remove from oven and place potatoes around chicken. Drizzle with a little more olive oil and season with salt, pepper and rosemary. Return to oven and cook for 45 minutes to an hour or until chicken is cooked thoroughly.
