Nice, easy way to create roasted-style garlic that keeps in the fridge for whenever you need a clove or two. Melts right into whatever you use it in.

Ingredients
- 1 head of garlic, separated into cloves, peeled and tailed
- extra virgin olive oil to cover completely

Preparation
Step 1
*Heat* oil and garlic in small saucepan over medium-low heat and cook over very low heat until soft, about 1 hour (do not brown). *When soft*, remove to a glass jar, cover with the oil and refrigerate.
*Keep* chilled and completely covered in oil.
