Heather's Mashed Potatoes

This is the recipe that I've used for mashed potatoes and my family always reheats the leftovers. My girls love to make fried mashed potatoes for breakfast the next day.

Ingredients
- 12 medium sized Russett potatoes (approx. 5" long), peeled and cut into wedges
- 1/2 stick margarine
- 3/4 - 1 cup milk

Step 1
In a Dutch oven pot, add water 1/2 of the way to the top of the pot. Add the potatoes and add additional water just until the water barely covers the potatoes. Cook the potatoes on MEDIUM-HIGH heat for 45 minutes. Drain the potatoes and place them in a large bowl. Mash the potatoes and the butter with a potato masher. Add the milk and use a hand mixer to finish mixing the potatoes to a creamy consistency. Serve the potatoes hot with butter or gravy.
