Ingredients
- 2 eggs
- 1 1/2 C plain breadcrumbs
- 1/3 C + 2 Tbsp fresh parsley
- 3/4 tsp salt
- 1/2 tsp pepper
- 3/4 # skinless/boneless chicken
- 4 Tbsp olive oil
- 1/2 # shrimp (optional)
- 2/3 C Marsala wine
- 1 C whipping cream
- 1/4 tsp cayenne
- 1/4 C parmesan cheese

Preparation
Step 1
Mix breadcrumbs, 1/3 C parsley, salt, pepper in bowl. Dip chicken in eggs then in crumb mixture to coat.
Heat 3 Tbsp oil in skillet. Add chicken; saute until cooked through. Transfer to plate.
If adding shrimp: Add 1 Tbsp oil after discrading residue. Add shrimp and saute until just cooked through. Transfer to plate with the chicken.
Add wine; boil until reduced to 1/2 C (about 2 minutes). Add cream; boil until thickens slightly (about 3 minutes). Mix in cayenne and parmesan. Add meat.
Serve over cooked pasta.
