Ingredients

  • 1 bunch cilantro, coarsely chopped
  • 2 cloves garlic
  • 1 tbsp red bell pepper, seeded, washed, and chopped
  • 1 tsp thyme
  • 1/2 cup red wine vinegar
  • 2 tsp Dijon mustard
  • 1/2 cup olive oil
  • 1 cup vegetable oil
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

In a food processor or blender place the parsley, garlic, bell pepper, thyme, vinegar, and mustard. Mix them all together. While blending on a low speed, slowly add the olive and vegetable oils, until the desired consistency is achieved. Add the sugar, salt, and pepper, and mix them in. Cover and refrigerate.
