Classic Guacamole Looneyspoons

Served with baked, whole grain tortilla chips, as a burger topper or as an accompaniment to grilled fish

Ingredients
- 2 large ripe avocados, seeded and mashed
- 2 TBS freshly squeezed lemon or lime juice
- 1/2 cup minced red onions OR 3 shallots finely diced
- 2 plum tomatoes, chopped OR cherry tomatoes work well
- 2 TBS minced fresh cilantro
- 1 jalapeno pepper, seeded and minced, or a couple shakes or hot pepper sauce (I used Frank's hot sauce)
- 2 TSP minced garlic
- 1/4 TSP each salt and cumin
- pinch freshly ground pepper

Preparation
Step 1
Combined all the ingredients in a med bowl. Cover and refriderate until serving time. Guacamole will keep for about 3 days in the fridge if well covered.
