Ingredients
- 2 1/2 cups lowfat milk
- 1 1/2 cups nonfat half and half milk
- 2/3 cup splenda
- 1/2 cup liquid egg substitute
- 2 larges egg yolks
- 2 teaspoons cornstarch
- 1/2 teaspoon nutmeg
- 2 teaspoons vanilla extract

Step 1
1. In a medium pot, mix together the milk, 1/2 cup of the half-
and-half (reserve 1 cup of the half-and-half in the refrigerator
to keep cold), and the sweetener.
2. In a small bowl, whisk together the liquid egg substitute,
egg yolks, cornstrch, and nutmeg. Add to the milk mixture
and cook for 5 to 8 minutes over low heat, stirring constantly,
until the mixture is thick enough to coat the back of a spoon.
3. Immediately turn off the heat and add the remaining cup of
chilled half-and-hald and the vanilla. Allow to cool slightly,
then refrigerate until thoroughly chilled.
