  • 1 pork tenderloin (3/4 lb/375g)
  • 1/2 tsp grated lime rind 2 mL
  • 2 tbsp lime juice 25mL
  • 2 tbsp chopped fresh coriander or parsley 25mL
  • 1 tbsp packed brown sugar 15 mL
  • 1 tbsp vegetable oil 15 mL
  • 2 tsp curry powder 10 mL
  • 1/4 tsp salt 1 mL
  • Pinch pepper
  • 1 large sweet yellow pepper

Cut pork into 1-1/2-inch (4 cm) cubes; place in bow..

Whisk together lime rind and juice, coriander, sugar, oil, curry powder, salt and pepper; add to bowl and toss to coat. Cover and marinate at room temperature for 30 minutes or in refrigerator for up to 2 hours. Remove from refrigerator 30 minutes before cooking.

Cut yellow pepper into chunks about same size as pork. Reserving any marinade, alternately thread pork and yellow pepper onto each of 4 soaked wooden skewers.

Place on greased grill over medium heat; cook, turning occasionally and besting with marinade, for 15 minutes or just until pork is no longer pink inside.
