This was my favorite breakfast meal when we stayed at Grandma and Grandpa Daigh's farm house.

Ingredients

  • 2 1/2 lbs. pork sausage
  • 1 lb. ground beef
  • 3 cups water (to be used with Bouillon cubes ONLY)
  • 1 - 2 14 1/2 oz. cans Beef Broth OR 4 Beef Bouillon Cubes
  • 1 1/2 cup corn meal
  • 2 tsp. Poultry Seasoning
  • Salt
  • Pepper

Step 1

In a large skillet, brown the ground beef and pork sausage. Add the water and beef bouillon cubes OR beef broth. Add the corn meal, salt, pepper, and poultry seasoning; Pat the mixture tightly into the pan. Cook the scrapple for 20 minutes. *Flip the mixture only ONCE during this time.* Place the mixture into a glass 9" x 13" baking dish. Refrigerate the scrapple overnight. Cut the scrapple into squares and cook each square in a hot skillet until heated through before serving. Serve immediately.
