Ingredients
- 1 1/2 lbs boneless, skinless chicken thighs
- 1 medium onion, halved and thinly sliced
- 1 (14.5 oz) can diced tomatoes, drained
- 2 T tomato paste
- 1 T grated ginger
- 2 cloves garlic, minced
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- salt and pepper
- 1/2 cup plain yogurt
- 1/4 cup chopped cilantro
- 1/2 tsp garam masala (optional)
- cooked white rice

Preparation
Step 1
1. In a slow cooker, stir together chicken, onions, tomatoes, tomato paste, ginger, garlic, coriander, and cayenne. Season with salt and pepper.
2. Cook on high 4 hours (low 8 hours). Stir in yogurt, cilantro and garam masala just before serving.
3. Serve over rice.
Oven Method:
Preheat oven to 350 degrees. Follow step one, using a 5 quart, heavy, lidded pot. Stir in 2 cups water. Cover, bake until tender, about 2 hours. Stir in yogurt, cilantro, and garam masala.
