Ingredients

  • 1-¾ cups unbleached flour (or ¾ cups whole wheat flour)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1/3 cup margarine
  • 2/3 cup Sugar In The Raw
  • 2 eggs
  • 1 cup mashed, ripe bananas (2-3 medium)
  • ½ cup chopped walnuts

Preparation

Step 1

1. Sift together dry ingredients. In a large mixing bowl, cream butter; add Sugar In The Raw and continue beating. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with bananas. Stir in chopped walnuts.

2. Pour batter into greased 9 x 5-inch loaf pan and bake at 350°F about 1 hour and 20 minutes or until knife inserted in center comes out clean. Let cool in pan 20 to 30 minutes before removing to rack. Makes 1 loaf or 12 slices.
