Ingredients

  • 1-3/4 cups boiling water
  • 1 cup quick cooking oatmeal
  • 1 cup firmly packed brown sugar
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1-3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tbsp. espresso powder or cocoa powder
  • 1 (12 oz) package chocolate chips

Step 1

Preheat the oven to 350 degrees. In a large bowl pour the water over the oatmeal and let it stand for 10 minutes. Add the brown and granulated sugars and butter, stirring until the butter melts. Add the eggs, flour, salt, baking soda and espresso powder. Add half the chocolate chips and mix well. Pour into a greased 13 x 9 inch pan. Sprinkle the remaining chocolate chips over the top of the cake.
Bake for 40 minutes.
