My family loves country ham. This slow fried is the only way to cook a slice of country ham. For a country boy there is nothing better than redeye gravy, country ham, eggs, and grits.

Ingredients

  • 2 (1/4 inch thick) slices of Country Ham
  • 2 tablespoons canola oil
  • Redeye gravy recipe follows

Preparation

Step 1

1. Slice country ham about 1/4-inch thick.
2. After allowing skillet to warm on low heat, add canola oil and place slices in skillet, cover with a lid and cook for about 10 minutes, turning often.
3. What's left is the redeye gravy fixin's.

REDEYE GRAVY (After ham is fried):
1. Remove ham to a heated platter. Add 1/2 to 3/4 cup of water to the juices in skillet.
2. Add 2 tablespoons brewed coffee to the juices
3. Increase the heat to moderate and simmer 3 to 5 minutes, stirring until gravy is reddish.
3. This is the redeye gravy.

Pour it over biscuits and the ham.
