Ingredients

  • 2 # veal scallops
  • 2 eggs
  • 1 tsp salt
  • Dash pepper
  • 3/4 C cracker crumbs, crushed
  • 1/2 C olive oil
  • 16 oz tomato sauce
  • 1/4 tsp basil
  • 1/4 tsp Worcestershire
  • 1/8 tsp garlic salt
  • 1 Tbsp butter
  • 1/4 C Parmesan cheese
  • 1/2 # sliced Mozzarella

Preparation

Step 1

Dip veal in eggs, salt and pepper. Pat in crumbs. Brown in skillet on both sides and set aside in a baking dish.

Heat tomato sauce, basil, Worcestershire, garlic salt and butter for 10 minutes. Pour over cutlets. Sprinkle with Parmesan. Cover and bake for 30 minutes in 350°F oven.

Remove cover and place mozzarella slice over each cutlet and bake 10 to 15 minutes.
