Grape Tomato and Avocado Salad...Easy

Use as a salad or appetizer served with tortilla chips.
Can be prepared up to four days ahead of serving.

Ingredients
- 1 pint grape tomatoes, halved
- 1/4 white onion, chopped
- 1 T olive oil
- 1 T fresh lemon juice
- 1/2 C fresh parsley or cilantro or mixture of both, chopped
- 2 avocados, diced
- Sea salt

Preparation
Step 1
In a non reactive glass bowl, toss together the tomatoes, onion, olive oil, lemon juice and parsley or cilantro. Add the avocado and lightly toss. Season to taste with sea salt.
Chill.
