Ingredients
- 8 boneless skinless chicken breast
- Salt and pepper
- 1 (8 oz.) pkg. Monterey Jack Cheese
- 1/2 c. butter, melted
- 1 clove garlic, minced
- 1 c. bread crumbs
- 1 c. Parmesan cheese, grated

Preparation
Step 1
Pound chicken breasts flat. Season with salt and pepper. Slice cheese about 1/4 inch thick and roll chicken around cheese. Add garlic to the butter and combine breadcrumbs with Parmesan cheese. Dip chicken in butter, then in breadcrumb combination. Place seam side down in 9 x 13 inch baking dish. Bake covered for 30 min. at 350 deg in preheated oven. Uncover and bake for 15 minutes more or until browned.
