Sauerkraut and Ribs

Ingredients
- olive oil 2 tablespoons
- pork baby back rib 1 rack cut individual
- salt and pepper to taste
- onion 1 medium chopped
- potatoes 6 mediums new white quartered
- sauerkraut 1 package
- chicken stock 1/2 cup

Preparation
Step 1
Set dutch oven over medium-high heat and heat the oil
Season the ribs with salt and pepper
Lay ribs in oven meat side down and sear them in a single layer
Transfer them to a platter
Add onions and saute until softened, scraping up any browned bits from the ribs
Add potatoes
Add ribs back in and cover with sauerkraut
Pour stock over top, cover the dutch oven and lower the heat
Simmer the pot on the stove for 2-3 hours until the ribs are tender
If the dish gets to dry at any point stir in a little chicken stock or water to keep it moist
