Ingredients

  • 5 tomatoes
  • 2 green peppers
  • 2 Spanish onions or 1 Spanish and 1 purple onion
  • 1 large English cucumber
  • 1/2 c feta cheese
  • 1/2 c Calamata olives
  • salt and pepper
  • DRESSING
  • 1/4 c white wine vinegar
  • 1 c olive oil
  • juice of 1/2 small lemon
  • 1/4 tsp Dijon mustard
  • 1/4 tsp pepper
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1 tsp chervil or 2 Tbsp chopped parsley
  • 1/2 tsp Italian seasoning
  • 1 clove garlic,pressed

Preparation

Step 1

Seed tomatoes and cut into large cubes
Cut peppers into slices or 1 " cubes
Chop cucumber into chunks
Pat vegetables dry and layer in salad bowl
Refrigerate until just before serving
Toss vegetables with enough dressing to coat well and stir in feta cheese
Decorate top with olives and additional feta cheese
