Bean and Cashew Salad

Ingredients
- 1/2 lb. whole fresh green beans
- boiling water
- ice water
- 2 cups cherry tomatoes, halved
- 1 cup toasted cashews
- 3/4 cup red onion, thinly sliced
- LEMON DILL DRESSING
- 1/3 cup olive oil
- 3 Tbsp. lemon juice
- 2 tsp. fresh dill, chopped or 1/2 tsp. dry dill weed
- 1 garlic clove, minced
- 1/2 tsp. chili paste (sambal oelek)
- 1/4 tsp. salt

Step 1
Blanch beans in boiling water in large saucepan for 1 to 3 minutes until bright green. Drain. Immediately plunge into ice water in large bowl. Let stand for about 10 minutes until cold. Drain. Transfer to separate large bowl.
Add tomato, cashews and onion. Toss.
LEMON DILL DRESSING
Combine all 6 ingredients in jar with tight-fitting lid. Shake well. Makes about 1/2 cup. Drizzle over salad. Toss well.
