Ingredients
- 4 eggs, separated
- 125 grams sugar
- 125 grams self-raising flour
- 2 tbs. corn oil
- 3 tbs. boiling water
- 1 tsp. vanilla

Step 1
Put the egg yolks, sugar, flour, oil, water and vanilla in a bowl and mix together with a wooden spoon. Beat for 1 – 2 minutes or until the batter is smooth. Whisk the egg whites until stiff. Give the batter another stir, and then add the whites. Fold in with a metal spoon, gently cutting through the mixture until all the whites have been incorporated. Pour into a greased 8 inch round pan.
For a Chocolate cake replace 25 grams of flour with 25 grams cocoa and add 1 tsp. baking powder. Dissolve the cocoa in the boiling water and then add it to the egg yolk mixture.
