Ingredients
- 1 can Aylmer Accents petite cut tomatoes with garlic & olive oil
- 1 1/4 cups shredded mozzarella, divided
- 1/4 cup chopped basil
- 1 pkg stuffing for chicken
- 8 small boneless chicken
- 1/3 cup roasted red pepper with parmesean dressing

Preparation
Step 1
1. Preheat oven to 350 degrees
2. Combine tomatores and their liquid, 1/2 cup mozzarella, basil and dry stuffing mix. Stir until moistened.
3. Put 2 chicken breast halves into large bag. Pund until 1/2 inch thick. Repeat until all chicken breasts are flattened.
4. Spread 1/8 of the mixture onto each chicken. Roll as tightly as possible. Place in 13 * 9 baking dish. Seam side down.
5. Pour remaining mixture over top and bake for 40 minutes.
6. Sprinkle with 3/4 cup cheese and bake 5 minutes longer.
